DKAT Associates, Inc. has been retained by world-class brewery located in the Lake Placid, NY, Region as their executive recruiter. We are actively seeking an experienced Brewer to work in their state-of-the-art brewery nestled in the majestic Adirondack Mountain Region of NYS. Our client is interested in a skilled brewer responsible for overseeing the brewing and cellaring process. This position is responsible for the operation of all brewing and cellar equipment including, but not limited to a 40HL automated GEA Craftstar Brewhouse, GEA Millstar Wetmill, GEA Westphalia HB-05 Centrifuge, ancillary pumps and compressors. This position works closely with the Production Manager to ensure all brewing and cellar operations run in an efficient and timely manner. In addition to hot and cold side operations this position is responsible for maintaining safety and efficiency standards. Responsibilities:
Manage all aspects of the brewing process, including mashing, lautering, boiling, fermentation and cellaring
Monitor fermentation processes, including yeast management, temperature control and timing to achieve desired flavors and alcohol content
Work with all brewing and cellar processes wort production, fermentation monitoring, centrifuge operation (hot & cold side), CIP skid, analytical equipment, yeast health and counts, yeast propagation, yeast pitching, dry hopping etc.
Maintain a clean and organized environment, following strict sanitation practices and prevent contamination
Implement quality control measures to ensure consistent beer production and adherence to established standards
Perform sensory evaluations and laboratory tests to assess beer characteristics, such as aroma, color, clarity and flavor
Monitor and adjust brewing parameters, such as pH levels, gravity and carbonation to achieve desired product specifications
Work with the brewing team in all areas of brewing as needed
Requirements:
2-3+ years’ experience in a production brewery
Enjoys working in a team environment
Associate or Master Brewer degree a plus
Able to adapt to a quickly changing environment
Organized and experience with quality control, recipe adherence and cellarman work
Study and analyze data to make decisions and recommendations
Organized, quality control and sensory analysis experience, and beer production
Adhere to comprehensive Standard Operating Procedures and Best Practices
Physical stamina to perform tasks such as lifting, moving, and standing for extended periods
Must be fully vaccinated against COVID-19
