DKAT Associates is seeking a dynamic and innovative Head Brewer for an established and successful brewing group in the majestic Adirondack Mountains of New York State. The Head Brewer will work closely with the brewing team to create award-winning caliber lagers, pilsners and ales. This individual will also work autonomously to marry sustainable ingredients with experimentation and creative flair to create a unique, one-of-a-kind and world-class Adirondack brewery experience. The 7BBL Fronhofer Design brewery and barrel aging program is situated within a rustic and cutting-edge restaurant and tasting room. Responsibilities:
Collaborate closely with our brewing team to experiment and incorporate locally grown and sourced ingredients, pushing the boundaries of flavor and creativity
Manage all aspects of the brewing process, including mashing, lautering, boiling, fermentation and laboratory analysis, ensuring the highest quality standards
Develop new beer recipes that champions innovation by crafting beer that showcase the versatility of brewing with creativity
Monitor fermentation processes, including yeast management, temperature control and timing to achieve desired flavors and alcohol content
Maintain a clean, organized and sanitary environment
Source and manage raw material inventory ensuring the supplies meet production demands optimizing inventory levels, minimize waste and control costs while adhering to the requirements of a NYS Farm Brewery licensee
Ensure regulatory compliances and maintain accurate records related to the brewing process and quality control
Collaborate with cross-functional teams, communicate and educate customers, suppliers and industry professionals to build strong industry relations
Requirements:
Associate or Master Brewer degree a plus with strong brewing principles
2-3+ years’ experience as a commercial brewer with a proven track record
Awarded brewer highly desired
Organized and meticulous in nature
Quality control, recipe development, packaging and cellarman experience
Study and analyze data to make critical decisions and recommendations
Adhere and contribute to comprehensive Standard Operating Procedures and Best
Practices
Ability to lift 50lbs and work both as a team and autonomously
